This is the lowest grade of beef, and it’s what you will find at most grocery stores and steak delivery sites. It’s the driest, blandest, and toughest kind of meat. If a steak doesn’t tell you the USDA category, you can assume it’s probably Select.

What Is USDA Prime Beef?

This is the second grade of beef, and it’s in between that of Select and Prime. The quality of USDA Choice depends on the cut, with cuts from the loin or rib being the most delicious. USDA Choice is still drier and tougher than USDA Prime.
Only 2% of beef qualifies as USDA prime, the best type of beef there is. USDA Prime steaks are amazingly tender, juicy, and flavorful. They have the most fat marbling, which melts into the steak as you cook it for a buttery, mouth-watering flavor.
